A Delicious Diet Coke Fudge Recipe With A Hint Of Lime

Happy Wednesday friends! How are the pre-holiday days treating you? I hope you getting lots of cozy family time in before the big day hits!

Last week I hosted a cozy gathering with a few girlfriends in my home and I made a yummy Diet Coke fudge recipe that I promised to share! It’s a fun twist on traditional fudge and it turned out better than I had expected. You guys have asked for the recipe and I’m here to deliver!

A Delicious Diet Coke Fudge Recipe With A Hint Of Lime

I knew I wanted to make a Diet Coke recipe at the party, just like last year (find my Diet Coke cake recipe HERE), and when I was searching the web I found a recipe for Dirty Coke fudge which inspired me to create my own fudge recipe. I wanted a Diet Coke fudge with a refreshing hint of lime and a little bit of crunch. This is what I came up with. I hope you enjoy it!

INGREDIENTS:

1/2 cup butter

2 cups granulated sugar

3/4 cup sour cream

1 tsp salt

1/2 cup semi-sweet chocolate chips

7 oz marshmallow cream

1 tsp vanilla extract

3 tbsp Diet Coke

1/3 cup shredded unsweetened coconut

1/3 crushed pretzels

1/2-1 tsp fresh lime zest (use 1 tsp of zest if you prefer more lime flavor)

Candy thermometer

INSTRUCTIONS:

Line a 9 x 9 pan with parchment paper. Put the butter, sugar, sour cream, and salt in a large saucepan over medium-high heat. Stir continuously while the butter melts and the sugar dissolves. Continue stirring until the mixture comes to a boil. Insert the thermometer once the mixture is boiling and cook, stirring constantly, until the thermometer reaches 235 degrees.

When the mixture reaches 235 degrees, remove it from the heat and add the vanilla and marshmallow cream. Stir until the marshmallow cream is melted and smooth. Quickly scoop out about 1 cup of the mixture and set aside. This will be the white swirl.

Add the chocolate chips to the pan, stirring until melted, returning the mixture to the heat briefly to melt the chips if needed. Then stir in the diet coke, coconut, crushed pretzels and lime zest until it is mixed well. Pour the fudge into the prepared pan then drop in dots of the white mixture that you set aside and swirl with a knife. Tap the pan a few times gently on the counter to even the top and release any air bubbles.

Refrigerate for at least 2 hours (or cool throughout) before serving. Once the fudge has cooled cut out small squares and serve. I like serving the fudge cold but once it has set you can sit it out and serve at room temperature.
