3cupscooked sweet potatoes, mashed (about 3 medium sized potatoes)I poke holes in mine and wrap them in plastic wrap and microwave for 10 minutes and they are perfect
1cupsugar
1/2tspcinnamon
1/2 stickbutter, melted
1/2 cup milk
1tspvanilla
2eggs beaten
Topping
1 cupbrown sugar
1cup chopped pecans
1/2 cupbutter
1/3cupself-rising flour
1/2cupcoconut flakes
Instructions
Mix all of the ingredients for the filling together in a large bowl. Pour into a greased 9" x 13" casserole dish. Mix the topping ingredients together and spread on top of the filling. Bake on 350 degrees for 40-45 minutes.
