The BEST Gluten-free Oatmeal Coconut Chocolate Chip Cookies
I know, I know the internet doesn’t need any more chocolate chip cookie recipes, especially around the holidays. But, these truly are THE BEST gluten-free oatmeal coconut chocolate chip cookies EVER! And if you know the Hogans, there is a good chance you have eaten or received these cookies before.
The Best Cookies Ever
This is our family’s favorite cookie recipe and my mom has been making it since I was little. To me, these cookies ooze love, comfort, holidays, and family gatherings. Do you have a family recipe that you know will continue to be passed down from generation to generation? My son always asks for these and everyone expects them at Thanksgiving and Christmas. The recipe makes a huge batch so we always have plenty to give away too.
Family Recipe Traditions
Other than my late Granny, our family doesn’t have a lot of recipe traditions, but there are a handful of dishes that we do really, really well. Our “Best Cookies Ever” recipe, as we call it, is one of those recipes. It’s funny, I’ve never been protective of a recipe like I am of this one and I rarely share it, so you’re in for a treat! We love these cookies so much that it would be a shame not to share! They’re so easy to make and the recipe yields a ton of cookies, approximately 50 or 60. So, when you make a batch you have enough for the fam and some to share with your neighbors which is one my of favorite things!
Why We Love These Cookies
What I love most about these cookies, other than being delicious, is that there is no flour so they are completely gluten-free. Make sure to check that your oats are gluten-free though. Some brand labels are a little sneaky. Also, compared to many other cookies, these don’t have a ton of sugar, just two cups of brown sugar for the whole batch and the recipe makes a lot!
The other best part is that you don’t need any fancy equipment. No hand mixer, no stand mixer, no food processor, barely even a spatula. And the bake time is super short!
The Best Gluten-Free Oatmeal Coconut Chocolate Chip Cookies
Equipment
- 1 large mixing bowl
- 1 Spatula
- 2-3 cookie sheets
- parchment paper
Ingredients
- 4 cups old-fashioned regular oats, make sure they are gluten-free
- 2 cups brown sugar
- 1.5 cups powdered milk
- 1 cup vegetable oil
- 1.5 cups shredded coconut, sweetened
- 1 package semi-sweet chocolate chips or dark chocolate chips if you prefer
- 1 tbsp vanilla extract
- 1 tsp salt
- 4 eggs, room temperature
Instructions
- Mix the dry ingredients in a large bowl, then add the wet ingredients. Stir the mixture together with a spatula at first, then use your hands to fully combine the ingredients.
- Once combined, use a spoon or cookie scoop to scoop the cookie dough onto a parchment-lined baking sheet about two inches apart. The dough will be sticky so you'll have to use your fingers to form them into a cookie shape. Sometimes I'll spread a little bit of cooking oil on my fingers to help.
- Bake for 15 minutes at 350 degrees. These cookies can burn easily on the bottom so for the best results check them every 2-3 minutes throughout the cook, especially if you're baking them for the first time. I move the cookies to a different oven rack at the halfway point, usually middle rack then top rack. When they turn slightly golden brown on top they are done.
- Remove the cookie sheet from the oven and gently pull the parchment paper with the cookies onto a wire rack to cool. Once cooled, store in an airtight container and share the rest with friends!

Why You Should Make These (and share with friends)
I know I’m biased but this is the most delicious cookie you will ever have IMHO! They are sweet but not too sweet, the chewy texture is SO good, and the coconut creates crispy edges. They really are the perfect cookies. This is a great recipe for your holiday guests, to bring as a hostess gift, and to share with friends so make sure to print out the recipe card. They will not last long.
I originally wrote this post as a collaboration with Cookbook Create, a personalized cookbook-making site, but sadly I don’t think they are in business anymore. I do highly recommend making a cookbook with family recipes to gift to family members. It was a really sweet gift and if I was going to make one again I would probably use Canva or Shutterfly. Another great way to share cookies with friends is to host a cookie swap. I suggest having friends over for a Christmas movie and cookie swap, and make sure to dress in pj’s or cozy clothes…just sayin’!
